Description

A hearty and flavorful ground beef enchilada casserole layered with tortillas, cheese, and a spicy sauce.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 8 corn tortillas
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add chopped onion and garlic to the skillet. Sauté until the onion is translucent.
  4. Stir in enchilada sauce, black beans, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  5. In a 9×13 inch baking dish, layer 3 tortillas at the bottom.
  6. Spoon half of the beef mixture over the tortillas, then sprinkle with 1 cup of cheese.
  7. Repeat the layers with the remaining tortillas, beef mixture, and cheese.
  8. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  9. Let cool for 5 minutes before serving.

  • For a spicy kick, add diced jalapeños to the beef mixture.
  • Substitute ground turkey for a leaner option.
  • Garnish with fresh cilantro or sliced olives before serving.
