Ingredients

- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, diced
- 2 stalks celery, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 cup frozen peas
- 2 cups chopped potatoes
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked.
- Add the chopped onion and garlic; sauté until translucent.
- Stir in the carrots and celery; cook for 5 minutes.
- Add the diced tomatoes, beef broth, oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the potatoes and continue to cook until tender, about 15 minutes.
- Stir in the frozen peas and heat through.
- Adjust seasoning as needed before serving.
Notes
- For a spicier version, add red pepper flakes.
- Top with fresh parsley for garnish.
- This soup can be stored in the fridge for up to 3 days.
