Ingredients

- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped macadamia nuts
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine melted butter with mashed bananas.
- Mix in baking soda and salt.
- Add sugar, egg, and vanilla extract; stir well.
- Gradually incorporate flour, mixing until just combined.
- Fold in crushed pineapple and macadamia nuts.
- Pour the batter into a greased loaf pan.
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes before transferring to a wire rack.
Notes
- For a richer flavor, brown the butter before adding.
- Substitute macadamia nuts with walnuts or pecans if desired.
- Serve warm with a spread of cream cheese for added richness.
