Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, coconut, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the crushed pineapple.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. To prepare the whipped cream, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  10. Once cakes are cooled, layer one cake with whipped cream and top with the second cake. Frost the top and sides with remaining whipped cream.
  11. Decorate with additional shredded coconut or pineapple slices if desired.
