- 2 medium sweet potatoes, peeled and cubed
- 1 cup spinach, chopped
- 1/2 cup red onion, thinly sliced

- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato cubes with olive oil, garlic powder, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine the cooked chicken, spinach, red onion, cherry tomatoes, and feta cheese.
- Add the roasted sweet potatoes to the salad mixture.
- Drizzle with balsamic vinegar and toss gently to combine.
- Serve immediately or chill for 30 minutes before serving.
