Ingredients

- 2 pounds of chicken breast
- 1 cup of diced carrots
- 1 cup of diced potatoes
- 1 cup of diced onions
- 2 cloves of garlic, minced
- 4 cups of low-sodium chicken broth
- 1 teaspoon of dried thyme
- 1 teaspoon of black pepper
- Salt to taste
- 2 cups of fresh spinach
Instructions
- Place the chicken breast in the crockpot.
- Add the carrots, potatoes, onions, and garlic on top of the chicken.
- Pour in the chicken broth.
- Season with thyme, black pepper, and salt.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, stir in the fresh spinach.
- Once cooked, shred the chicken with two forks and mix well.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a spicier dish, add red pepper flakes.
- Substitute chicken with turkey for a variation.
- Consider adding other vegetables like bell peppers or zucchini.
