Ingredients
Scale
- 2 cups chicken or vegetable broth
- 1 cup cooked lentils
- 1 cup diced chicken breast
- 1 cup chopped kale
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup chopped onions
- 3 cloves minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, heat a splash of oil over medium heat.
- Add the onions, garlic, carrots, and celery; sauté until softened.
- Add the diced chicken and cook until browned.
- Stir in the cooked lentils, broth, thyme, and paprika.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add kale and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste before serving.
Notes
- For a vegetarian version, omit chicken and use vegetable broth.
- Experiment with different beans for added protein.
- Garnish with fresh herbs before serving.
