Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine diced vegetables and parsley.
  6. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Add quinoa to the vegetable mixture and pour dressing over.
  8. Toss gently to combine and serve chilled or at room temperature.
