- 2 lbs beef chuck roast
- 1 tbsp olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 carrots, peeled and sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the beef chuck roast with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat.
- Sear the beef on all sides until browned, about 4-5 minutes per side.
- Remove the beef and set aside.
- Add chopped onions and garlic to the pot, sauté until translucent.
- Stir in carrots and potatoes, cooking for an additional 3 minutes.
- Add tomato paste, thyme, and rosemary, stirring to combine.
- Pour in red wine, scraping up any browned bits from the bottom.
- Add beef broth and return the beef to the pot.
- Cover and transfer to the oven, cooking for 3-4 hours, or until the meat is tender.
- Remove from oven, let rest for 15 minutes before slicing.
- Serve warm with vegetables and sauce from the pot.
Notes
- For a richer flavor, add mushrooms or bell peppers.
- Serve with crusty bread for dipping.
- This dish can be made a day in advance and reheated.
