Ingredients

  • 2 lbs beef chuck roast
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef chuck roast with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat.
  4. Sear the beef on all sides until browned, about 4-5 minutes per side.
  5. Remove the beef and set aside.
  6. Add chopped onions and garlic to the pot, sauté until translucent.
  7. Stir in carrots and potatoes, cooking for an additional 3 minutes.
  8. Add tomato paste, thyme, and rosemary, stirring to combine.
  9. Pour in red wine, scraping up any browned bits from the bottom.
  10. Add beef broth and return the beef to the pot.
  11. Cover and transfer to the oven, cooking for 3-4 hours, or until the meat is tender.
  12. Remove from oven, let rest for 15 minutes before slicing.
  13. Serve warm with vegetables and sauce from the pot.

Notes

  • For a richer flavor, add mushrooms or bell peppers.
  • Serve with crusty bread for dipping.
  • This dish can be made a day in advance and reheated.
