Description

A rich and festive chocolate yule log cake decorated for Christmas.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 5 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for cream)
  • Chocolate shavings for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 15×10 inch jelly roll pan and line it with parchment paper.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together eggs, oil, and vanilla. Gradually add to dry ingredients.
  4. Stir in boiling water until the batter is smooth.
  5. Pour batter into the prepared pan and spread evenly.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Once out of the oven, immediately invert the cake onto a clean kitchen towel dusted with powdered sugar.
  8. Roll the cake up with the towel and let it cool completely.
  9. Meanwhile, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  10. Unroll the cooled cake and spread whipped cream evenly over the surface.
  11. Roll the cake back up without the towel, then place seam side down on a serving platter.
  12. Frost the outside with remaining whipped cream and decorate with chocolate shavings.

Notes

  • For a mocha flavor, add 1 tablespoon of instant coffee granules to the boiling water.
  • Consider adding a layer of fruit preserves under the cream for added flavor.
  • Use a serrated knife to trim the edges for a cleaner look before serving.
