Description
A rich and festive chocolate yule log cake decorated for Christmas.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 5 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup boiling water
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for cream)
- Chocolate shavings for decoration
Instructions
- Preheat your oven to 350°F (175°C). Grease a 15×10 inch jelly roll pan and line it with parchment paper.
- In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
- In another bowl, whisk together eggs, oil, and vanilla. Gradually add to dry ingredients.
- Stir in boiling water until the batter is smooth.
- Pour batter into the prepared pan and spread evenly.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Once out of the oven, immediately invert the cake onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake up with the towel and let it cool completely.
- Meanwhile, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Unroll the cooled cake and spread whipped cream evenly over the surface.
- Roll the cake back up without the towel, then place seam side down on a serving platter.
- Frost the outside with remaining whipped cream and decorate with chocolate shavings.
Notes
- For a mocha flavor, add 1 tablespoon of instant coffee granules to the boiling water.
- Consider adding a layer of fruit preserves under the cream for added flavor.
- Use a serrated knife to trim the edges for a cleaner look before serving.
