Ingredients

  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • 1/2 cup powdered sugar
  • Fresh berries for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a mixing bowl, combine flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream the butter and granulated sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. While the cake cools, heat heavy cream in a saucepan until simmering.
  10. Remove from heat and add chopped dark chocolate, stirring until smooth.
  11. Once the cake has cooled, pour the chocolate ganache over the top.
  12. Chill for at least 1 hour before slicing.
  13. Dust with powdered sugar and garnish with fresh berries before serving.

Notes

  • For a mint variation, add peppermint extract to the ganache.
  • Use different types of chocolate for varied flavors.
  • Consider serving with a scoop of vanilla ice cream for contrast.
