Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until soft, about 5 minutes.
  3. Stir in garlic, thyme, and basil. Cook for an additional minute.
  4. Pour in vegetable broth and add diced tomatoes, green beans, corn, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Season with salt and pepper.
  7. Remove bay leaf before serving.
  8. Garnish with fresh parsley.
