- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 6 cups vegetable broth
- 2 cups diced tomatoes
- 1 cup green beans, trimmed and cut
- 1 cup corn kernels
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until soft, about 5 minutes.
- Stir in garlic, thyme, and basil. Cook for an additional minute.
- Pour in vegetable broth and add diced tomatoes, green beans, corn, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
- Remove bay leaf before serving.
- Garnish with fresh parsley.
Notes
- For a creamy texture, blend part of the soup and return it to the pot.
- Experiment with different vegetables based on seasonality.
- Serve with crusty bread or croutons for added texture.
