Description

Delicious ice cream sandwiches made with homemade cookies and your choice of ice cream.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • 2 pints of your favorite ice cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar in a large bowl.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop tablespoon-sized portions of dough onto parchment-lined baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and allow to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
  10. Once cookies are cool, scoop your desired ice cream onto the flat side of one cookie and top with another cookie to form a sandwich.
  11. Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
