Description
A quick and flavorful side dish made with potatoes and ranch seasoning, cooked in an Instant Pot.

- 2 pounds baby potatoes, halved
- 1 packet ranch seasoning mix
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Set the Instant Pot to sauté mode. Add olive oil and allow it to heat up.
- Add halved potatoes to the pot. Sauté for about 5 minutes until slightly golden.
- Sprinkle ranch seasoning over the potatoes and stir to coat evenly.
- Pour in chicken broth and stir gently.
- Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
- Once cooking is complete, perform a quick release of pressure.
- Open the lid and stir the potatoes. Season with salt to taste.
- Transfer to a serving dish and garnish with fresh parsley before serving.
Notes
- For a spicy kick, add red pepper flakes.
- Try using different types of potatoes for varied textures.
- Serve with grilled meats or as a stand-alone dish.
