Description

A quick and flavorful side dish made with potatoes and ranch seasoning, cooked in an Instant Pot.


Ingredients

  • 2 pounds baby potatoes, halved
  • 1 packet ranch seasoning mix
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil and allow it to heat up.
  2. Add halved potatoes to the pot. Sauté for about 5 minutes until slightly golden.
  3. Sprinkle ranch seasoning over the potatoes and stir to coat evenly.
  4. Pour in chicken broth and stir gently.
  5. Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
  6. Once cooking is complete, perform a quick release of pressure.
  7. Open the lid and stir the potatoes. Season with salt to taste.
  8. Transfer to a serving dish and garnish with fresh parsley before serving.
