A savory and spicy twist on the classic grilled cheese sandwich featuring jalapenos and crispy bacon.
Ingredients

- 4 slices of sourdough bread
- 4 ounces of sharp cheddar cheese, shredded
- 4 ounces of pepper jack cheese, shredded
- 4 slices of cooked bacon, chopped
- 2 fresh jalapenos, sliced
- 2 tablespoons of unsalted butter
Instructions
- Preheat your skillet over medium heat.
- Spread butter on one side of each slice of sourdough bread.
- Layer cheddar and pepper jack cheese on the unbuttered side of two slices.
- Add chopped bacon and sliced jalapenos on top of the cheese.
- Top with the remaining slices of bread, buttered side facing out.
- Place the sandwiches in the skillet and cook until golden brown, about 3-4 minutes per side.
- Remove from heat, slice, and serve immediately.
Notes
- For extra heat, include pickled jalapenos.
- You can substitute the bread with any type preferred.
- Pair with a side of tomato soup for a classic combination.
