Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded coconut, almond flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together melted coconut oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir until fully combined.
  5. Using a cookie scoop, drop dough onto a lined baking sheet.
  6. Flatten each cookie slightly with the back of a fork.
  7. Bake for 12-15 minutes or until edges are golden brown.
  8. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
