Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook until fragrant.
  4. Add the chicken breasts to the pot and brown on both sides.
  5. Incorporate the white beans, chicken broth, diced green chilies, cumin, chili powder, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Remove chicken, shred it, and return it to the pot.
  8. Stir in the heavy cream and cheddar cheese until melted and smooth.
  9. Serve hot, garnished with fresh cilantro.
