Ingredients

  • 1 cup cooked brown rice
  • 1 cup diced bell peppers
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground turkey over medium heat.
  3. Add bell peppers, corn, black beans, cumin, chili powder, salt, and pepper. Cook until heated through.
  4. Mix in the cooked brown rice and half of the cheese.
  5. Fill tortillas with the mixture and roll them up.
  6. Place the rolled tortillas in a baking dish and top with remaining cheese.
  7. Bake for 15-20 minutes until the cheese is melted.
