- 1 lb ground turkey
- 1 cup cooked brown rice
- 1 cup diced bell peppers
- 1 cup corn kernels
- 1 cup shredded cheese
- 1 can black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste

Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground turkey over medium heat.
- Add bell peppers, corn, black beans, cumin, chili powder, salt, and pepper. Cook until heated through.
- Mix in the cooked brown rice and half of the cheese.
- Fill tortillas with the mixture and roll them up.
- Place the rolled tortillas in a baking dish and top with remaining cheese.
- Bake for 15-20 minutes until the cheese is melted.
Notes
- Substitute ground turkey with chicken or beef.
- Add diced onions for extra flavor.
- Serve with salsa or guacamole.
