- 1 lb ground turkey
- 1 cup cooked rice
- 1 cup shredded cheese
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 tablespoon taco seasoning
- 1 cup salsa
- 4 large tortillas
- Cooking spray
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the cooked rice, black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and heat through.
- Spray a baking dish with cooking spray.
- Lay a tortilla flat and scoop some of the filling onto the center. Sprinkle with cheese and roll it up tightly.
- Place the rolled tortilla seam-side down in the baking dish.
- Repeat with remaining tortillas and filling.
- Top the rolled tortillas with additional salsa and cheese.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
Notes
- Use whole wheat tortillas for added fiber.
- Substitute ground beef or chicken for the turkey if desired.
- For a vegetarian option, omit meat and add more beans or vegetables.
