  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 tablespoon taco seasoning
  • 1 cup salsa
  • 4 large tortillas
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground turkey over medium heat until browned.
  3. Add the cooked rice, black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and heat through.
  4. Spray a baking dish with cooking spray.
  5. Lay a tortilla flat and scoop some of the filling onto the center. Sprinkle with cheese and roll it up tightly.
  6. Place the rolled tortilla seam-side down in the baking dish.
  7. Repeat with remaining tortillas and filling.
  8. Top the rolled tortillas with additional salsa and cheese.
  9. Bake for 20-25 minutes until the cheese is melted and bubbly.

Notes

  • Use whole wheat tortillas for added fiber.
  • Substitute ground beef or chicken for the turkey if desired.
  • For a vegetarian option, omit meat and add more beans or vegetables.
