Ingredients

  • 2 cups beef broth
  • 1 cup water
  • 1/2 pound beef brisket, thinly sliced
  • 1/2 cup kimchi, chopped
  • 1/4 cup green onions, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon ginger, grated
  • 1/2 teaspoon gochugaru (Korean red pepper flakes)
  • 1 block tofu, cubed

Instructions

  1. In a large pot, combine beef broth and water. Bring to a boil over medium-high heat.
  2. Add the sliced beef brisket and simmer for 10 minutes until tender.
  3. Stir in the kimchi, green onions, soy sauce, sesame oil, garlic, ginger, and gochugaru.
  4. Reduce the heat and let it simmer for an additional 15 minutes.
  5. Gently add the cubed tofu and cook for another 5 minutes.
  6. Adjust seasoning to taste and serve hot.

Notes

  • This soup can be garnished with additional green onions.
  • Consider adding mushrooms for extra depth.
  • Serve with rice on the side for a complete meal.
