- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 2 cups uncooked pasta (lasagna noodles broken into pieces)
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add diced onion and minced garlic. Sauté until onion is translucent.
- Stir in crushed tomatoes, beef broth, and Italian seasoning. Bring to a boil.
- Add broken lasagna noodles and simmer until pasta is al dente.
- In a separate bowl, mix ricotta cheese with salt and pepper.
- Serve the soup in bowls, adding a dollop of ricotta on top.
- Sprinkle with shredded mozzarella and grated Parmesan.
- Garnish with fresh basil before serving.
