- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the onion and garlic, sauté until translucent.
- Stir in crushed tomatoes, beef broth, oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the broken lasagna noodles and cook until tender, about 10 minutes.
- In a bowl, mix ricotta cheese with a pinch of salt and pepper.
- Serve the soup in bowls, adding a scoop of ricotta, mozzarella, and Parmesan on top.
- Garnish with fresh basil before serving.

- Use Italian sausage for added flavor.
- For a vegetarian version, substitute beef with lentils or mushrooms.
