  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the onion and garlic, sauté until translucent.
  3. Stir in crushed tomatoes, beef broth, oregano, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the broken lasagna noodles and cook until tender, about 10 minutes.
  6. In a bowl, mix ricotta cheese with a pinch of salt and pepper.
  7. Serve the soup in bowls, adding a scoop of ricotta, mozzarella, and Parmesan on top.
  8. Garnish with fresh basil before serving.
