A simple and delicious way to use leftover turkey in a savory turkey pot pie.

- 2 cups cooked turkey, shredded
- 1 cup frozen mixed vegetables
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup carrots, diced
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 1 cup milk
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large skillet, melt butter over medium heat. Add onion, celery, and carrots. Sauté until softened.
- Stir in flour and cook for 1 minute.
- Gradually whisk in chicken broth and milk. Cook until thickened.
- Add turkey, mixed vegetables, thyme, salt, and pepper. Mix well.
- Pour the turkey mixture into a pie dish.
- Cover with pie crust, sealing the edges.
- Cut slits in the top to allow steam to escape.
- Bake for 30-35 minutes or until crust is golden brown.
- Let cool for 10 minutes before serving.
Notes
- For a richer flavor, add a splash of white wine to the filling.
- You can use any leftover vegetables in this recipe.
- Consider garnishing with fresh parsley before serving.
