A flavorful lemon chicken pasta dish that combines tender chicken with a zesty lemon sauce and al dente pasta.

- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts (about 1 lb)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
- Season chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and let rest.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add chicken broth, lemon juice, and lemon zest. Bring to a simmer and reduce by half.
- Stir in heavy cream and Parmesan cheese until smooth. Adjust seasoning with salt and pepper.
- Slice the chicken and add to the sauce, along with the cooked pasta. Toss to combine.
- Serve hot, garnished with chopped parsley.
Notes
- For added flavor, marinate the chicken in lemon juice and herbs for 30 minutes before cooking.
- To make it lighter, substitute heavy cream with Greek yogurt.
- You can add vegetables like spinach or cherry tomatoes for extra nutrition.
