Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- Add cold butter and mix until the mixture resembles coarse crumbs.
- Stir in lemon zest.
- In another bowl, combine heavy cream, egg, vanilla, and lemon juice.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Turn the dough onto a floured surface and knead gently.
- Pat the dough into a rectangle about 1 inch thick.
- Cut into triangles or use a round cutter for uniform shapes.
- Place on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until golden brown.
- Remove from the oven and cool slightly before serving.
Notes
- For a glaze, mix powdered sugar with lemon juice.
- Experiment by adding dried fruit or herbs.
- Serve with clotted cream or butter for added richness.
