Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold butter and mix until the mixture resembles coarse crumbs.
  4. Stir in lemon zest.
  5. In another bowl, combine heavy cream, egg, vanilla, and lemon juice.
  6. Pour the wet ingredients into the dry ingredients and mix until just combined.
  7. Turn the dough onto a floured surface and knead gently.
  8. Pat the dough into a rectangle about 1 inch thick.
  9. Cut into triangles or use a round cutter for uniform shapes.
  10. Place on a baking sheet lined with parchment paper.
