Ingredients

- 1 cup dried lentils
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 6 cups vegetable broth
- 1 bay leaf
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in garlic, cumin, and smoked paprika. Cook for 1-2 minutes until fragrant.
- Add lentils, vegetable broth, and bay leaf. Bring to a boil.
- Reduce heat and simmer for 30-40 minutes until lentils are tender.
- Remove bay leaf. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- Use different lentils for varied textures.
- Consider adding diced tomatoes for extra acidity.
