Ingredients

  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  4. Stir in garlic, cumin, and smoked paprika. Cook for 1-2 minutes until fragrant.
  5. Add lentils, vegetable broth, and bay leaf. Bring to a boil.
  6. Reduce heat and simmer for 30-40 minutes until lentils are tender.
  7. Remove bay leaf. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

  • For a spicier version, add a pinch of cayenne pepper.
