Ingredients

- 2 slices of sourdough bread
- 4 oz lobster meat, cooked and chopped
- 2 oz Gruyère cheese, shredded
- 2 oz cheddar cheese, shredded
- 2 tbsp unsalted butter
- 1 tbsp mayonnaise
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, mix the lobster meat with mayonnaise, lemon juice, salt, and pepper.
- Spread butter on one side of each slice of sourdough bread.
- On the unbuttered side, layer Gruyère and cheddar cheese.
- Add the lobster mixture on top of the cheese.
- Top with the second slice of bread, buttered side up.
- Heat a skillet over medium heat and place the sandwich in the skillet.
- Cook for 3-4 minutes until golden brown, then flip and cook the other side until the cheese melts.
- Remove from heat, slice, and serve immediately.

- For added flavor, consider adding fresh herbs like chives or dill to the lobster mixture.
