Ingredients

  • 2 slices of sourdough bread
  • 4 oz lobster meat, cooked and chopped
  • 2 oz Gruyère cheese, shredded
  • 2 oz cheddar cheese, shredded
  • 2 tbsp unsalted butter
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the lobster meat with mayonnaise, lemon juice, salt, and pepper.
  2. Spread butter on one side of each slice of sourdough bread.
  3. On the unbuttered side, layer Gruyère and cheddar cheese.
  4. Add the lobster mixture on top of the cheese.
  5. Top with the second slice of bread, buttered side up.
  6. Heat a skillet over medium heat and place the sandwich in the skillet.
  7. Cook for 3-4 minutes until golden brown, then flip and cook the other side until the cheese melts.
  8. Remove from heat, slice, and serve immediately.
