A hearty low carb white chicken chili that is flavorful and satisfying.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 1 can (15 oz) white beans, drained and rinsed
- 4 cups chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup heavy cream
- Fresh cilantro for garnish
Instructions
- In a large pot, heat oil over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic and cook for 1 minute.
- Add chicken breasts, green chilies, and spices. Cook for 5 minutes.
- Pour in chicken broth and bring to a simmer.
- Cover and cook for 20 minutes or until chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Add heavy cream and beans, stir well, and heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- For added heat, include jalapeños.
- Consider using rotisserie chicken for convenience.
- This chili can be made in a slow cooker.
