Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add chicken breasts, green chilies, and spices. Cook for 5 minutes.
  5. Pour in chicken broth and bring to a simmer.
  6. Cover and cook for 20 minutes or until chicken is cooked through.
  7. Remove chicken, shred it, and return to the pot.
  8. Add heavy cream and beans, stir well, and heat through.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with fresh cilantro.

Notes

  • For added heat, include jalapeños.
  • Consider using rotisserie chicken for convenience.
