Ingredients

  • 4 cups of chicken broth
  • 1 cup of dry white wine
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in Arborio rice, toast for 2-3 minutes.
  4. Pour in white wine, cook until absorbed.
  5. Add chicken broth one ladle at a time, stirring frequently until absorbed.
  6. Once rice is al dente, remove from heat.
  7. Stir in butter and Parmesan cheese until creamy.
  8. Season with salt and pepper.
  9. Serve immediately, garnished with extra cheese if desired.
