Description

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 6 cups beef broth
  • 1 cup diced tomatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped spinach
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides, then remove and set aside.
  3. In the same pot, add carrots and celery. Sauté for about 5 minutes until softened.
  4. Add diced tomatoes and beef broth to the pot. Bring to a boil.
  5. Return meatballs to the pot. Reduce heat and let simmer for 20 minutes.
  6. Add spinach and cook for an additional 5 minutes.
  7. Serve hot, garnished with fresh parsley.

  • For a spicy kick, add red pepper flakes to the meatball mixture.
  • Substitute ground turkey or chicken for a lighter option.
