Description

Delicious meatloaf muffins made with ground beef and seasoned vegetables.


Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, garlic, egg, milk, Worcestershire sauce, salt, and pepper.
  3. Mix until just combined, avoiding overmixing.
  4. Use a muffin tin and spray it with cooking spray.
  5. Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
  6. Top each muffin with a spoonful of ketchup.
  7. Bake for 25-30 minutes or until the internal temperature reaches 160°F (70°C).
  8. Let cool for 5 minutes before removing from the tin.

Notes

  • Experiment with different meats, such as turkey or chicken.
  • Add grated cheese for a richer flavor.
  • Use barbecue sauce instead of ketchup for a different taste.
