Delicious meatloaf muffins made with ground beef and seasoned vegetables.
Ingredients

- 1 pound ground beef
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, garlic, egg, milk, Worcestershire sauce, salt, and pepper.
- Mix until just combined, avoiding overmixing.
- Use a muffin tin and spray it with cooking spray.
- Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
- Top each muffin with a spoonful of ketchup.
- Bake for 25-30 minutes or until the internal temperature reaches 160°F (70°C).
- Let cool for 5 minutes before removing from the tin.
Notes
- Experiment with different meats, such as turkey or chicken.
- Add grated cheese for a richer flavor.
- Use barbecue sauce instead of ketchup for a different taste.
