Description

A flavorful Mexican chicken burrito casserole with layers of chicken, rice, beans, and cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 tablespoon taco seasoning
  • 8 flour tortillas
  • 1/2 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, rice, black beans, corn, salsa, taco seasoning, and half of the cheese.
  3. Spread a thin layer of the mixture in a greased 9×13 inch baking dish.
  4. Layer four tortillas over the mixture, then add half of the remaining filling.
  5. Repeat the layers with the remaining tortillas and filling, finishing with a layer of tortillas on top.
  6. Sprinkle the remaining cheese over the top layer of tortillas.
  7. Bake in the preheated oven for 30-35 minutes, until the cheese is melted and bubbly.
  8. Let cool for 5 minutes and garnish with cilantro before serving.

Notes

  • Use rotisserie chicken for faster preparation.
  • For a spicier dish, add jalapeños to the filling.
  • Serve with sour cream and guacamole on the side.
