Description
A flavorful Mexican chicken burrito casserole with layers of chicken, rice, beans, and cheese.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese (cheddar and Monterey Jack mix)
- 1 tablespoon taco seasoning
- 8 flour tortillas
- 1/2 cup chopped fresh cilantro
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, rice, black beans, corn, salsa, taco seasoning, and half of the cheese.
- Spread a thin layer of the mixture in a greased 9×13 inch baking dish.
- Layer four tortillas over the mixture, then add half of the remaining filling.
- Repeat the layers with the remaining tortillas and filling, finishing with a layer of tortillas on top.
- Sprinkle the remaining cheese over the top layer of tortillas.
- Bake in the preheated oven for 30-35 minutes, until the cheese is melted and bubbly.
- Let cool for 5 minutes and garnish with cilantro before serving.
Notes
- Use rotisserie chicken for faster preparation.
- For a spicier dish, add jalapeños to the filling.
- Serve with sour cream and guacamole on the side.
