- 500g minced wallaby
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- 1/2 cup beef stock
- 1 tbsp olive oil
- 1 sheet puff pastry
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- In a pot, boil sweet potatoes until fork-tender, then mash and set aside.
- In a skillet, heat olive oil over medium heat. Add onions and garlic, cooking until softened.
- Add minced wallaby, cooking until browned. Stir in thyme, rosemary, salt, and pepper.
- Pour in beef stock and simmer for 10 minutes.
- Combine wallaby mixture with mashed sweet potatoes.
- Roll out the puff pastry and line a pie dish.
- Fill the pastry with the wallaby and sweet potato mixture.
- Cover with another pastry sheet, sealing the edges. Cut slits for steam to escape.
- Brush the top with beaten egg.
- Bake for 25-30 minutes until golden brown.
Notes
- For a twist, add a dash of chili for heat.
- Serve with a side salad for freshness.
- This recipe can be made ahead and frozen before baking.
