Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté until fragrant.

- Add broccoli and cook for 5 minutes.
- In a separate pot, bring vegetable broth to a boil.
- Add quinoa to the broth, cover, and reduce heat. Simmer for 15 minutes.
- Combine cooked quinoa with the chicken and broccoli mixture.
- Top with Parmesan cheese and serve hot.

- For a vegetarian option, substitute chicken with chickpeas.
- You can add other vegetables like bell peppers or carrots.
