Description

A rich and airy mousse dessert that combines chocolate and cream for a delightful finish.

Ingredients

Scale
  • 200g dark chocolate (70% cocoa), chopped
  • 300ml heavy cream, divided
  • 3 large eggs, separated
  • 75g granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a bowl, whip 200ml of heavy cream to soft peaks.
  3. In another bowl, whisk egg whites until foamy, then gradually add sugar and continue whisking until stiff peaks form.
  4. In a separate bowl, beat egg yolks with vanilla extract, then mix in the melted chocolate.
  5. Fold the whipped cream into the chocolate mixture gently to maintain volume.
  6. Carefully fold the beaten egg whites into the mixture until no white streaks remain.
  7. Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.
  8. Before serving, whip the remaining 100ml of heavy cream and dollop on top for garnish.

Notes

  • For a fruit variation, consider adding a layer of raspberry puree at the bottom of the serving dishes.
  • Garnish with chocolate shavings or fresh berries for added texture and flavor.
  • Ensure the chocolate is not too hot when mixing with egg yolks to avoid cooking them.
