- 200g dark chocolate (70% cocoa), chopped
- 300ml heavy cream, divided
- 3 large eggs, separated
- 75g granulated sugar
- 1 tsp vanilla extract
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a bowl, whip 200ml of heavy cream to soft peaks.
- In another bowl, whisk egg whites until foamy, then gradually add sugar and continue whisking until stiff peaks form.
- In a separate bowl, beat egg yolks with vanilla extract, then mix in the melted chocolate.
- Fold the whipped cream into the chocolate mixture gently to maintain volume.
- Carefully fold the beaten egg whites into the mixture until no white streaks remain.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.
- Before serving, whip the remaining 100ml of heavy cream and dollop on top for garnish.
Notes
- For a fruit variation, consider adding a layer of raspberry puree at the bottom of the serving dishes.
- Garnish with chocolate shavings or fresh berries for added texture and flavor.
- Ensure the chocolate is not too hot when mixing with egg yolks to avoid cooking them.
