Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season the beef tenderloin with salt, pepper, minced garlic, and rosemary.
  3. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned.
  4. Transfer the beef to a roasting pan. Roast for 25-30 minutes or until it reaches your desired doneness.
  5. While the beef is roasting, prepare the vegetables. Toss them in olive oil, salt, and pepper.
  6. Place the vegetables on a baking sheet and roast in the oven for the last 20 minutes of the beef cooking time.
  7. Remove the beef from the oven and let it rest for 10 minutes before slicing.
  8. In the same skillet used for searing, add red wine and balsamic vinegar. Simmer to reduce and create a sauce.
  9. Plate the sliced beef with roasted vegetables. Drizzle the red wine reduction over the top.
