- 2 lbs beef tenderloin

- 1 cup red wine
- 2 cups assorted seasonal vegetables (carrots, Brussels sprouts, etc.)
- 2 tbsp butter
- 1 tbsp balsamic vinegar
Instructions
- Preheat your oven to 425°F (220°C).
- Season the beef tenderloin with salt, pepper, minced garlic, and rosemary.
- Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned.
- Transfer the beef to a roasting pan. Roast for 25-30 minutes or until it reaches your desired doneness.
- While the beef is roasting, prepare the vegetables. Toss them in olive oil, salt, and pepper.
- Place the vegetables on a baking sheet and roast in the oven for the last 20 minutes of the beef cooking time.
- Remove the beef from the oven and let it rest for 10 minutes before slicing.
- In the same skillet used for searing, add red wine and balsamic vinegar. Simmer to reduce and create a sauce.
- Plate the sliced beef with roasted vegetables. Drizzle the red wine reduction over the top.

- For a more intense flavor, marinate the beef overnight.
- Try different herbs like thyme or oregano for variation.
- Serve with mashed potatoes or a grain for a complete meal.
