Scale
- 2 lbs beef tenderloin, trimmed
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 4 cloves garlic, minced
- 1 cup red wine
- 1 cup beef broth
- Salt and pepper to taste
- 1 tbsp butter
- 1 lb seasonal vegetables (carrots, asparagus, Brussels sprouts)
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, salt, pepper, rosemary, thyme, and minced garlic.
- Heat a skillet over high heat and sear the beef on all sides for 2-3 minutes until browned.
- Transfer the beef to a roasting pan and roast in the oven for 25-30 minutes for medium-rare.
- In the same skillet, add red wine and beef broth, scraping the bottom to deglaze.
- Simmer the sauce until reduced by half, then finish with butter for richness.
- While the sauce reduces, steam or roast the seasonal vegetables until tender.
- Let the beef rest for 10 minutes before slicing.
- Plate the beef slices with vegetables and drizzle with the red wine reduction.
Notes
- For a different flavor, consider marinating the beef for several hours before cooking.
- Use a meat thermometer to ensure the desired doneness.
- Experiment with different herbs or vegetables based on seasonal availability.
