Ingredients

  • 2 lbs beef tenderloin
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary, chopped
  • 1 tbsp Dijon mustard
  • Salt and pepper, to taste
  • 1 cup red wine
  • 2 cups mushrooms, sliced
  • 1 cup heavy cream
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef tenderloin with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat.
  4. Sear the beef on all sides until browned, about 3 minutes per side.
  5. Remove from heat and brush with Dijon mustard.
  6. Transfer to a baking dish and roast in the oven for 25-30 minutes, or until desired doneness.
  7. In the same skillet, add garlic and rosemary, sauté for 1 minute.
  8. Add mushrooms and cook until softened, about 5 minutes.
  9. Pour in red wine, scraping the bottom of the pan to deglaze.
  10. Reduce the wine by half, then stir in heavy cream, thyme, and balsamic vinegar.
  11. Simmer for 5 minutes until sauce thickens.
  12. Slice the beef and serve with the mushroom sauce.

Notes

  • For a different flavor, replace mushrooms with shallots.
  • Garnish with microgreens for an elegant presentation.
  • Pair with a rich red wine for a perfect complement.
