- 2 lbs beef tenderloin
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary, chopped
- 1 tbsp Dijon mustard
- Salt and pepper, to taste
- 1 cup red wine
- 2 cups mushrooms, sliced
- 1 cup heavy cream
- 1 tbsp fresh thyme, chopped
- 1 tbsp balsamic vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Sear the beef on all sides until browned, about 3 minutes per side.
- Remove from heat and brush with Dijon mustard.
- Transfer to a baking dish and roast in the oven for 25-30 minutes, or until desired doneness.
- In the same skillet, add garlic and rosemary, sauté for 1 minute.
- Add mushrooms and cook until softened, about 5 minutes.
- Pour in red wine, scraping the bottom of the pan to deglaze.
- Reduce the wine by half, then stir in heavy cream, thyme, and balsamic vinegar.
- Simmer for 5 minutes until sauce thickens.
- Slice the beef and serve with the mushroom sauce.
Notes
- For a different flavor, replace mushrooms with shallots.
- Garnish with microgreens for an elegant presentation.
- Pair with a rich red wine for a perfect complement.
