- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon cornstarch (optional, for thickening)
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the beef in batches, ensuring a good sear on all sides.
- Transfer the browned beef to the crock pot.
- Add potatoes, carrots, onion, and garlic to the pot.
- Pour in beef broth and Worcestershire sauce.
- Season with thyme, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 8 hours or high for 4 hours.
- If desired, mix cornstarch with a little water and stir into the stew for thickening 30 minutes before serving.
Notes
- For a richer flavor, add red wine to the broth.
- Experiment with herbs like rosemary or bay leaves for different taste profiles.
- Serve with crusty bread for a complete meal.
