- 1 cup Arborio rice
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup raisins (optional)
Instructions
- In a medium saucepan, combine the Arborio rice, milk, sugar, and salt. Cook over medium heat, stirring occasionally.
- Once the mixture begins to simmer, reduce heat to low. Cook for 30-40 minutes until the rice is tender and the mixture thickens.
- In a separate bowl, whisk together the eggs, vanilla extract, and ground cinnamon.
- Gradually add a ladleful of the hot rice mixture to the egg mixture, whisking continuously to temper the eggs.
- Slowly add the egg mixture back into the saucepan, stirring constantly to combine.
- If using, stir in the raisins and cook for another 5 minutes.
- Remove from heat and let sit for 10 minutes to further thicken.
- Serve warm or chilled, garnished with a sprinkle of cinnamon.
Notes
- You can substitute Arborio rice with other short-grain rice for different textures.
- For added flavor, consider infusing the milk with lemon zest or cardamom pods before adding the rice.
