  • 1/2 cup raisins (optional)

Instructions

  1. In a medium saucepan, combine the Arborio rice, milk, sugar, and salt. Cook over medium heat, stirring occasionally.
  2. Once the mixture begins to simmer, reduce heat to low. Cook for 30-40 minutes until the rice is tender and the mixture thickens.
  3. In a separate bowl, whisk together the eggs, vanilla extract, and ground cinnamon.
  4. Gradually add a ladleful of the hot rice mixture to the egg mixture, whisking continuously to temper the eggs.
  5. Slowly add the egg mixture back into the saucepan, stirring constantly to combine.
  6. If using, stir in the raisins and cook for another 5 minutes.
  7. Remove from heat and let sit for 10 minutes to further thicken.
  8. Serve warm or chilled, garnished with a sprinkle of cinnamon.
