- 2 cups potato gnocchi
- 1 pound boneless, skinless chicken breast
- 1 tablespoon olive oil
- 1 cup heavy cream
- 2 cups chicken broth
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- Cook the gnocchi according to package instructions and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chicken and season with salt, pepper, garlic powder, and onion powder.
- Cook the chicken until golden brown and fully cooked, about 6-8 minutes per side. Remove from the skillet and let it rest.
- In the same skillet, add chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese.
- Add the cooked gnocchi and spinach. Cook for an additional 3-5 minutes until the sauce thickens slightly.
- Slice the chicken and serve it over the gnocchi. Drizzle with extra sauce and garnish with additional Parmesan if desired.
Notes
- For a richer flavor, use homemade chicken broth.
- You can substitute the spinach with kale or other leafy greens.
- Experiment with adding mushrooms or sun-dried tomatoes for variation.
