- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 pound baby potatoes, halved
- 8 ounces green beans, trimmed
- Salt and pepper to taste
- 1 lemon, juiced
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine olive oil, garlic, thyme, rosemary, salt, pepper, and lemon juice.
- Add chicken breasts to the bowl and coat them in the marinade.
- Place marinated chicken in a large oven-safe skillet.
- Add halved potatoes to the skillet, arranging them around the chicken.
- Roast in the preheated oven for 20 minutes.
- After 20 minutes, add green beans to the skillet.
- Return the skillet to the oven and roast for an additional 15-20 minutes, or until chicken is cooked through and potatoes are tender.
- Remove from oven and let rest for 5 minutes before serving.

- For added flavor, consider marinating chicken for 1-2 hours before cooking.
