Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 pound baby potatoes, halved
  • 8 ounces green beans, trimmed
  • Salt and pepper to taste
  • 1 lemon, juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, garlic, thyme, rosemary, salt, pepper, and lemon juice.
  3. Add chicken breasts to the bowl and coat them in the marinade.
  4. Place marinated chicken in a large oven-safe skillet.
  5. Add halved potatoes to the skillet, arranging them around the chicken.
  6. Roast in the preheated oven for 20 minutes.
  7. After 20 minutes, add green beans to the skillet.
  8. Return the skillet to the oven and roast for an additional 15-20 minutes, or until chicken is cooked through and potatoes are tender.
