A hearty one-pot lasagna soup that combines the flavors of traditional lasagna with the ease of a soup.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 8 oz lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and garlic. Sauté until onion is translucent.
- Stir in crushed tomatoes, beef broth, and Italian seasoning. Bring to a boil.
- Add broken lasagna noodles. Reduce heat and simmer until noodles are tender.
- Mix in ricotta cheese and half of the mozzarella. Stir until combined.
- Season with salt and pepper to taste.
- Serve in bowls, topped with remaining mozzarella and Parmesan cheese.
Notes
- For a vegetarian version, substitute ground beef with lentils or mushrooms.
- Experiment with different cheeses for varied flavors.
- Garnish with fresh basil or parsley for added freshness.
