Description

A hearty one-pot lasagna soup that combines the flavors of traditional lasagna with the ease of a soup.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and garlic. Sauté until onion is translucent.
  3. Stir in crushed tomatoes, beef broth, and Italian seasoning. Bring to a boil.
  4. Add broken lasagna noodles. Reduce heat and simmer until noodles are tender.
  5. Mix in ricotta cheese and half of the mozzarella. Stir until combined.
  6. Season with salt and pepper to taste.
  7. Serve in bowls, topped with remaining mozzarella and Parmesan cheese.
