- 1 zucchini, diced
- 4 cups vegetable broth
- 1 can (15 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups spinach, chopped
- 1 cup cooked beans (e.g., cannellini or kidney)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic; sauté until translucent.
- Stir in carrots, celery, and bell pepper; cook for 5 minutes.
- Add zucchini, vegetable broth, diced tomatoes, thyme, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- In the last 5 minutes, stir in spinach and cooked beans.
- Adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
