- 2 pounds of Yukon Gold potatoes, peeled and cubed
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter

- Black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the cubed potatoes in salted water until fork-tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add the butter and garlic to the pot and mash until smooth.
- Stir in the heavy cream and half of the Parmesan cheese. Season with salt and black pepper.
- Transfer the mixture to a greased baking dish.
- Top with the remaining Parmesan cheese.
- Bake for 25-30 minutes until golden and bubbly.
- Garnish with fresh parsley before serving.
