  • 2 pounds of Yukon Gold potatoes, peeled and cubed
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the cubed potatoes in salted water until fork-tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add the butter and garlic to the pot and mash until smooth.
  5. Stir in the heavy cream and half of the Parmesan cheese. Season with salt and black pepper.
  6. Transfer the mixture to a greased baking dish.
  7. Top with the remaining Parmesan cheese.
  8. Bake for 25-30 minutes until golden and bubbly.
  9. Garnish with fresh parsley before serving.
