- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 4 ripe peaches, pitted and sliced
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine flour, butter, sugar, and salt. Mix until crumbly.
- Gradually add ice water, mixing until the dough forms a ball.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Roll out the dough on a floured surface to fit a 9-inch tart pan.
- Place the dough in the tart pan and trim any excess.
- In a bowl, mix peaches, brown sugar, vanilla, cornstarch, and lemon juice.
- Pour the peach mixture into the tart shell.
- Bake for 35-40 minutes or until the crust is golden brown.
- Let cool before serving.
