- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda

- 1/2 cup fruit preserves (your choice)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla, baking soda, and salt. Mix until smooth.
- Using a cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Using your thumb, press a small indentation into the center of each cookie.
- Fill each indentation with approximately 1/2 teaspoon of fruit preserves.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
