- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix peanut butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Roll dough into balls and place on a baking sheet, flattening each ball slightly.
- Bake for 10-12 minutes or until golden brown.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Once cooled, spread peanut butter on the bottom of one cookie and top with another to form a sandwich.
Notes
- Use crunchy peanut butter for added texture.
- Chill the dough for 30 minutes for easier handling.
- For a chocolate variation, dip the sandwich cookies in melted chocolate.
