  • 1 cup white chocolate chips
  • 1/4 teaspoon peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. Fold in the crushed peppermint candies.
  7. Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes or until the edges are set.
  9. While the cookies cool, melt white chocolate chips with peppermint extract in a double boiler.
  10. Drizzle the melted white chocolate over the cooled cookies and sprinkle with additional crushed peppermint.
