- 4 chicken thighs, boneless and skinless
- 1 cup coconut milk
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon lime juice
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup green onions, chopped
- Fresh cilantro for garnish
Instructions
- In a bowl, whisk together coconut milk, soy sauce, pineapple juice, brown sugar, garlic, ginger, lime juice, black pepper, and red pepper flakes.
- Place chicken thighs in a shallow dish and pour marinade over them. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat grill or skillet over medium-high heat.
- Remove chicken from marinade and grill for 6-7 minutes on each side or until internal temperature reaches 165°F.
- Remove chicken from heat and let rest for 5 minutes.
- Slice chicken and drizzle with remaining marinade, heated on stove until boiling.
- Garnish with chopped green onions and cilantro before serving.
Notes
- For a spicier kick, add more red pepper flakes.
- Serve with jasmine rice or grilled vegetables.
- Marinating overnight enhances flavor.
