  • 4 chicken thighs, boneless and skinless
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon lime juice
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup green onions, chopped
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, whisk together coconut milk, soy sauce, pineapple juice, brown sugar, garlic, ginger, lime juice, black pepper, and red pepper flakes.
  2. Place chicken thighs in a shallow dish and pour marinade over them. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from marinade and grill for 6-7 minutes on each side or until internal temperature reaches 165°F.
  5. Remove chicken from heat and let rest for 5 minutes.
  6. Slice chicken and drizzle with remaining marinade, heated on stove until boiling.
  7. Garnish with chopped green onions and cilantro before serving.
